MEASUREMENTS:

1/2 CUP ERYTHRITOL

1 1/2 CUPS 35% CREAM

1/4 TSP SALT

2 TBS MCT OIL OR BUTTER

1 TSP VANILLA

2 CUPS COCONUT FLAKES

2 OZ CHOCOLATE * USE LINDT OR PASCHA *


*USE THE SAME INGREDIENTS FOR BOTH MIXTURES*


RECIPE:


STEP 1: HEAT CREAM IN A POT (ADD ALL TO POT)



STEP 2: ADD 2 TBS BUTTER


STEP 3: ADD ERYTHRITOL


STEP 4: SALT


STEP 5: BOIL IN MEDIUM HEAT


STEP 6: SIMMER ON LOW HEAT, AND ADD XANTHAN GUM AND VANILLA EXTRACT


STEP 7: IN A BOWL ADD COCONUT, POUR THE MIXTURE FROM THE POT AND MIX TOGETHER


STEP 8: LINE A RECTANGLE SHAPED CONTAINER WITH PARCHMENT PAPER THE ADD THE MIXTURE AND REFRIGERATE FOR 1 HOUR


STEP 9: MAKE THE CHOCOLATE COATING IN A POT


STEP 10: ADD CREAM, ERYTHRITOL, SALT, VANILLA EXTRACT (TO POT) AND HEAT THEN SIMMER


STEP 11: IN A BOWL ADD 4 OUNCES OF KETO CHOCOLATE THEN POUR HEATED MIXTURE ON CHOCOLATE WAIT 1 MINUTE AND THEN MIX


STEP 12: CUT COCONUT INTO DESIRED PIECES. USE A FORK OR TONGS TO DIP COCONUT IN THE CHOCOLATE


STEP 13: LINE A CONTAINER WITH PARCHMENT PAPER AND REFRIGERATE FOR 1 HOUR
