KETO COCONUT CAKE

Want a moist coconut cake? Follow this recipe and you'll get one. Coconut flour is typically hard to bake with because it absorbs liquid. Not here! I found a way to keep the coconut flour from getting hard from all the moisture. You will love this keto coconut cake because it has no sugar (sweetened with erythritol) and minimal ingredients.

EASY KETO COCONUT CAKE


RECIPE


6 eggs

1/2 cup coconut oil

1/3 cup water

1/4 cup cream

1 1/2 TSP Vanilla

2/4 TSP salt

1 1/2 TSP baking powder

2 TSP cream cheese

1/2 cup coconut flour

4 TBS Erythritol


Syrup 3/4 WATER

4 TBS ERYTHRITOL


Icing


3/4 CUP CREAM

4 TBS Erythritol

1/2 TSP VANILLA

1 CUP COCONUT FLAKES



STEP 1: USE A HAND MIXER TO MIX ALL INGREDIENTS IN A BOWL (EXCEPT SYRUP & ICING)


STEP 2: BAKE @350 FOR 25 MINS


STEP 3: MAKE SYRUP


STEP 4: CAKE IS FINISHED, CUT SLITS IN CAKE


STEP 5: POUR SYRUP ON CAKE LET IT COOL


STEP 6: MAKE ICING, SPREAD ON CAKE
